Spicy Fish Stew

Ingredients:

Spicy Fish Stew

2 oz. Fresh or frozen, thawed haddock or cod

1 tsp vegetable oil

1 (14oz) Can diced tomatoes with one green pepper, two stalks celery and one medium onion

1 (11oz) Can spicy tomato juice ...if you can not find tomato juice in your local store use plain tomato juice and one teaspoon black pepper and a quarter teaspoon ground cumin

1 cup  Frozen whole kernel corn

Directions

Prep time: 5 min Cook time: 20 min Serves 4

1. Rinse fish and pat dry. Cut fish into 3/4 inch pieces.

2. Dice onion, green pepper and celery

3. In a 3-quart saucepan cook onion, celery and pepper in hot oil until tender . Stir in undrained tomatoes, tomato juice and corn. Bring to a boil. Reuce heat and simmer 5 min.

4. Add fish. Continue cooking for 6 min. more or until fish flakes w/a fork and corn is tender.
