Black Bean Soup

2 cups black beans ( turtle soup beans )

1 cup onion, chopped...not too fine

1 cup celery with leaves, chopped..not too fine

1 cup green Peppers. chopped...not fine

1 bay leaf

1/8 teaspoon thyme

2 tablespoonsWorcestershire sauce

2 1/2 quarts water

1 pound cooked, diced bacon

1 cup chicken stock  made from water and chicken base

Salt, to taste

1/2 teaspoon crushed peppercorns

1/4 cup Red Wine

1. Wash beans in cold water and transfer to soup pot. Add all other ingredients except salt, pepper, and wine. Simmer at least three hours or until a bean will crush easily.

2. Return to heat and add salt, pepper, and wine. Adjust the consistency to your preference.

If too thin, add a little roux made of equal parts butter and flour. Stir over heat until rich and creamy. About ten minutes on low heat. Stir Constantly

If too thick, add a small amount of chicken stock.

To serve Top with thin, sliced raw onion. and grated sharp cheese.
